Is there any way to transform without immediately jumping to, for example, Super Saiyan 3? I'd like to be able to transform to Super Saiyan or Kaioken without having to press F + S constantly. Is there any way to transform 1 state at a time?

This has already been changed in more recent development(non-stable) builds, forcing you to transform up in sequence for first time transformations(after which you can simply skip over to the highest), or you can jump to specific transformations by pressing f + 1 up to f + 5(for Goku, or which ever numbered tier you're going to).
Keep in mind that using this second method does not let you skip over tiers if you have not transformed to them already, but once you've gone through the "first transformation" animation for each tier, you can skip between them at will.

Aside from what Shenku mentioned, you can do this in older builds by regulating your power level properly. The state you transform to is based on your current power level so lowering it from your maximum will let you jump to a specific tier.

Oh, alright. That's cool. I heard something about being able to press a number to transform. I wonder if the stable version will ever get updated to the unstable versions, since it seems like the unstable versions got a lot of updates compared to the stable version we've been using for a long time, but I guess every update has to be bug tested first. I'm not really sure when the unstable ones become stable, but I guess we gotta wait and see.

Oh, right, I know this. It's kind of difficult though, since you have to guess what transformation is on what spot. But yeah, I can't wait for this new feature of pressing numbers.

The reason we haven't had a new stable revision is mostly because no one has been working on finishing up the various systems that were being worked on previously(Most work from the people who did the programming stuff shifted from ZEQ2-Lite to ZEQ2), and several systems were actually pulled(if memory serves) and need to be replaced before a new stable revision can be made.

It's not too hard to figure it out though. Just look at the "requirementCurrent" setting in the tier file for each of that character's tiers, and it says the exact powerlevel you need to be at to hit that transformation.
For example, Goku's Super Saiyan tier requires that your powerlevel is at 4000, where as Kaioken is 2500. Simply adjust your powerlevel between those two numbers and you'll always go to Kaioken. If you want to go to Super Saiyan but not Super Saiyan 2, simply go above 4000, and stay below 10000(which is the requirementCurrent setting for Super Saiyan 2's tier).
