problem: my 3ds max is acting and won't save the pose for its life if I click off of one of the bones so I'm being careful
still feel a little weird about the legs though

The problem is actually in the chest and pelvis.
Nobody can maintain a standing pose with his back straight like that, at least not for long and it isn't natural.
To shift your balance your chest leans forward in a stance like that. Whenever you're doing animations try to do the pose yourself and watch how your whole body is positioned.
Animating is so much more than moving legs and arms.
The abdomen/ chest and pelvis are almost always bend rotated typically in the direction the movement is taking place.
So for example when you throw a punch, you also throw your chest. It rotates sidewards to extend the arm even further and it lunges forward together with the arm.

Make sure that if it's animated already that you turn Autokey on, otherwise it reverts to what the keyframe originally was set to.

While everyone is on the topic of poses in 3ds max, can somebody tell me why I can't copy Gogeta's posture to the other side?
If not never mind....
That's looking much better by the way, but the back needs to be bent forward more still.

I don't think you bended it forward at all. Look at the ref picture you have.
You should been bending those 3 spine bones all of them.

The bones are in the perfect spot on the right, and I want to mirror them, but the button won't copy the posture when I click it.

yeah the copy paste thing does that to me a lot

You need to make a collection first(making sure to have all the bones you want copied selected already), then copy the posture, then click paste opposite.
As for Vegeta, see if this overlay helps you to see what needs adjusting for the posture... His shoulders are not low enough, he's not really leaning forward enough, and his arms are not rotated correctly, but it's close. Also I think that the front facing leg needs to go over a little bit more for him to keep his balance properly(thus why there's an overlay of another leg shifted over to his right, viewer's left).

A nice new ink n paint map makes it look so much nicer, also a colored background.
Anyway this is what I could come up with.
Only bone I didn't move in any direction were the wrist and even I think I should. I moved the shoulders, neck, pelvis all the spines, and so and so on.
